Lamb Chops, Crisp Romaine & Charred Zucchini
Mary’s Blue Hour Bistro
Published

A quick, elegant dinner built around sale-find lamb chops, a rosy skillet sear, and bright lemon at Mary’s Blue Hour Bistro.
A sale on lamb chops at Dash set the tone for a polished, unfussy dinner at Mary’s Blue Hour Bistro. With little previous experience cooking lamb, Mary gave the three chops a confident paprika-and-oregano crust, then seared them until deeply browned outside and rosy at the center.
The plate keeps the supporting cast clean and lively: zucchini, browned at the edges with garlic, catches the lemon-oregano pan sauce; crisp romaine brings a cool green counterpoint, finished with a visible dusting of grated cheese. The final presentation—on a blue-and-white patterned plate—has the appealing contrast of dark, glossy chops, golden zucchini, and a generous heap of bright leaves.
It is the kind of dinner that feels special without becoming elaborate: one skillet, a little butter and lemon, and careful attention to the sear. Most importantly, the lamb chops were a hit.

# Blue Hour Lamb Chops with Lemon-Oregano Pan Sauce, Charred Zucchini & Romaine
**For 2 diners · About 25 minutes · Medium-high skillet sear; rest lamb 5 minutes**
## Equipment & Before You Start
– Large skillet, tongs, small bowl, and 2 warm dinner plates
– Halve 1 romaine heart lengthwise; cut 1 medium zucchini into ½-inch half-moons or long planks.
– Finely chop 2 garlic cloves; juice the lemon.
## Ingredients
– 3 lamb chops
– 1 medium zucchini
– 1 romaine heart
– 1 lemon
– 2 garlic cloves, finely chopped
– 1 teaspoon dried oregano
– ¼ teaspoon paprika
– 2 tablespoons butter
– 1 tablespoon olive oil, plus more for the salad
– ¾ teaspoon salt, plus a pinch for the zucchini
– Black pepper
– 2 tablespoons lemon juice, for the pan sauce
– 2 tablespoons water
– 1 tablespoon lemon juice, for the romaine
## Steps
1. Pat the lamb dry. Rub with 1 tablespoon olive oil, oregano, paprika, ¾ teaspoon salt, and black pepper. Heat the skillet over medium-high.
2. Add the zucchini and a pinch of salt. Cook 6–8 minutes, turning occasionally, until browned at the edges and tender. Add half the garlic for the final 30 seconds. Transfer zucchini to a warm plate.
3. Return the skillet to medium-high. Sear the lamb undisturbed for 3 minutes on the first side, then turn and cook 2½–3 minutes on the second side for rosy medium-rare chops about 1 inch thick. If the fat edge is broad, stand the chops on it for 30 seconds.
4. Transfer lamb to a plate and rest 5 minutes. Lower the skillet heat to medium.
5. Add butter, remaining garlic, 2 tablespoons lemon juice, and water to the skillet. Scrape up the browned bits and bubble for 1 minute. Stir any lamb resting juices into the sauce; season with black pepper and a pinch of salt.
6. Dress the romaine with olive oil, 1 tablespoon lemon juice, salt, and pepper.
## Watch For
– Remove the zucchini before the garlic darkens.
– The lamb should develop a deep russet crust and release easily when nudged with tongs.
– For chops nearer medium-rare, return them to the warm skillet for 45–60 seconds per side, then rest 1 minute.
## Plate & Present
Divide the zucchini between 2 warm plates. Arrange 1½ lamb chops per plate, spoon the lemon-oregano pan sauce over the meat, and set the dressed romaine alongside. Finish with black pepper and wipe the plate rims before serving.
