Pork Chops with Mushrooms and Roasted Garlic
Mary’s Blue Hour Bistro
Published

Pork loin is one of the world's best deals. For about $2 a pound, you get meat that's quick to cook and impressive at the Bistro table. I asked Big Daddy how we could make use also of a pound of beautiful baby bella mushrooms. I also wanted to make use of delicious roasted garlic we had made the night before to go with roasted chicken thighs. (Winner, winner, chicken dinner! That is a whole other story.)
The roasted garlic proved a pleasure as dinner prep moved forward. Roasting the bulbs the night before had been educational for me — I had taken my time and learned how to do it right, and the aroma was intoxicating. Big Daddy, meanwhile, gloated over the mushrooms assembled in a steel colander. Several caps were whole, he exulted; a few had split to reveal their dark gills, and all were waiting to discover whether they would become beautifully browned or merely take a warm steam bath.
Take it, Big Daddy:
The plan favored browning. Once thoroughly dried, the mushrooms would hit a hot, uncrowded skillet, where patience—and a strict no-fidgeting rule for the first few minutes—could build golden color. Salt would follow once browning began, while garlic would arrive near the end. Garlic is welcome at Mary’s, but it does not get unsupervised access to high heat.
The pork chops were set for a golden sear before joining the mushrooms and mellow roasted garlic. Lemon, deliberately omitted from a longer marinade, could be squeezed over the finished plate for a last-minute flash of brightness.
And so the chalkboard special became “Moonlit Mushroom Chops”: a name with poetry, swagger and considerably more glamour than “the mushrooms are draining.” Behind it, though, was a sensible dinner built on timing, good heat and one dependable bistro truth: roasted garlic always deserves a second act.
