Parmesan-Stuffed Italian Meatloaf Roulade with Tomato-Herb Sauce
Big Daddy's Bistro
Published

A low-carb, cheese-filled meatloaf roulade finished with a deeply browned Parmesan crust and bright red sauce.
A two-pound blend of beef, pork, and veal became something far more dramatic than an ordinary loaf at Big Daddy’s Bistro: an Italian-style roulade layered around a generous stripe of melting cheese.
Parmesan took the place of breadcrumbs, bringing savory structure to the meat mixture alongside onion, garlic, oregano, basil, fennel, and Worcestershire. Rolling the broad rectangle into a tidy log was the evening’s showpiece, and the foil-lined pan captured every stage—from the cheese-filled center to the finished loaf’s darkly bronzed top.
Some cheese escaped as it baked, then was gathered over the loaf to become a golden, crisp-edged cap. Sliced after its rest and served with tomato-herb sauce sharpened with vinegar, the roulade delivered the rich, saucy Italian profile the table wanted.
The verdict was emphatic: “Best meatloaf he ever had.” For the cook, the triumph was just as clear: “I can’t believe I rolled it up.”

# Parmesan-Stuffed Italian Meatloaf Roulade with Tomato-Herb Sauce
**Timing & heat:** Bake uncovered at 375°F for about 60 minutes; rest 15 minutes. Ground meat must reach 160°F in the center.
## Equipment & Before You Start
– Rimmed sheet pan or 9-by-13-inch baking dish, lined with foil and lightly oiled
– Small saucepan and instant-read thermometer
– Heat oven to **375°F**. Keep the foil open; the roulade bakes uncovered on the foil-lined tray.
## Ingredients
### Roulade
– 2 pounds beef-pork-veal meatloaf mix
– 2 eggs
– ½ cup finely grated Parmesan, plus more for serving
– 1 small onion, very finely diced or grated
– 3 garlic cloves, minced
– ½ teaspoon salt
– ½ teaspoon black pepper
– 1½ teaspoons dried oregano
– 1 teaspoon dried basil
– ½ teaspoon fennel seed, lightly crushed
– 1 tablespoon Worcestershire sauce
– 1½ cups shredded mozzarella, provolone, or Italian cheese blend
### Tomato-Herb Sauce
– 1 tablespoon olive oil
– 1 garlic clove, minced
– 1 can (14–15 ounces) crushed tomatoes, tomato sauce, or hand-crushed canned tomatoes
– ½ teaspoon dried oregano
– ½ teaspoon dried basil
– Pinch red-pepper flakes
– 1 tablespoon red-wine vinegar or 2 teaspoons balsamic vinegar
– Salt and black pepper
## Steps
1. Beat the eggs in a large bowl. Stir in the ½ cup Parmesan, onion, 3 garlic cloves, salt, pepper, oregano, basil, fennel seed, and Worcestershire. Add the meatloaf mix and combine gently just until even. Let stand for 5 minutes.
2. Press the meat mixture into a 12-by-9-inch rectangle, about ¾ inch thick, on the prepared tray. Scatter the shredded cheese in a stripe across the center, leaving a 1½- to 2-inch bare border around the edges.
3. Starting from a long edge, use the foil to lift the meat over the cheese and roll into a log. Pinch the seam and ends closed, patch cracks with damp fingers, and turn the loaf seam-side down.
4. Bake uncovered and start a **60-minute countdown timer**.
5. **When 40 minutes remain,** heat the olive oil in a small saucepan over medium-low heat. Cook the garlic for 30 seconds. Add tomatoes, oregano, basil, red-pepper flakes, salt, and black pepper. Simmer gently.
6. **When 20 minutes remain,** stir the vinegar or balsamic into the sauce. Keep warm over the lowest heat.
7. When the timer reaches **0:00**, check the center of the roulade with an instant-read thermometer; it must register **160°F**. If needed, continue baking until it reaches temperature.
8. Rest the roulade for 15 minutes before slicing into thick rounds.
## Watch For
– Mix only until combined; overmixing makes the loaf tough.
– Keep cheese away from the edges to limit leaks. Any escaped cheese will brown into a crisp edge.
– Check temperature in the meat at the thickest center, not in the melted-cheese pocket.
## Hold & Serve
Keep the sauce warm while the roulade rests. Refrigerate leftovers within 2 hours.
## Plate & Present
Spoon a small pool of tomato-herb sauce onto each plate. Arrange thick roulade slices, slightly overlapping, on the sauce. Finish with grated Parmesan and black pepper, then wipe the plate rims before serving.
