At Mary’s Blue Hour Bistro, a handful of aging—but sound—garlic bulbs became a fragrant supporting act for jazzy chicken and ratatouille.

I had four garlic bulbs that had been going begging, because I kept putting off doing what I dreamed to do with them, which was roast them. I'd roasted garlic before, but I remembered it as a long and involved process, so I kept putting it off.

No more! Today was the day. I had Big Daddy to look over my shoulder, and he agreed with me that the garlic would prove a lovely complement to the smoked paprika chicken thighs we were roasting. And so we went to work.

Take it, Big Daddy:

Sunday’s roast at Mary’s Blue Hour Bistro began with a practical bit of kitchen thrift: four garlic bulbs that were getting on in years but still felt firm and smelled fresh. After careful inspection, the papery outer layers were removed, the sound cloves were exposed, and even the bulb missing a clove or two joined the lineup. (Note from Mary: I had used those cloves a few days before.)

Not every clove needed to show. The trimmed bulbs were set cut-side up on individual sheets of foil, drizzled with olive oil, given a pinch of salt, and bundled snugly to hold in the steam. The resulting silver packets tucked onto the roasting pan beside generously seasoned chicken thighs, ready for 40 to 50 minutes at 425°F.

The garlic was destined first for a roasted-garlic blue cheese yogurt sauce, with plenty left for another day. That made the batch both useful and economical: a few cloves for the sauce, then mellow roasted garlic waiting to enrich leftover ratatouille, a dressing, vegetable purée, or pan sauce.

Around it, the Sunday spread took shape in vivid color—paprika-tinted chicken and two pans of eggplant, zucchini, red pepper, and onion given enough room to roast. A small preparation became the quiet anchor of a full, resourceful kitchen session.

# Foil-Roasted Garlic Bulbs

**Timing & heat:** Roast at 425°F for 40–50 minutes, checking at 40 minutes.

## Ingredients
– 4 garlic bulbs, or as available
– 1–2 tsp olive oil per bulb
– Small pinch of salt per bulb

## Steps
1. Inspect every bulb. Remove any bad cloves and expose the tops of the sound cloves.
2. Drizzle each bulb with 1–2 teaspoons olive oil and add a small pinch of salt.
3. Wrap the bulbs individually, or seal them together tightly in a foil packet.
4. Roast at 425°F for 40–50 minutes, checking at 40 minutes.
5. Remove when the cloves are lightly golden, deeply soft, and easily squeezed from their skins.
6. Cool leftovers and refrigerate in a covered container within 2 hours. Use within about 3–4 days, or freeze in portions for longer storage.

## Watch For
– Dry or sprouting garlic may be roasted, but discard cloves that are moldy, slimy, rotten, or sour-smelling.
– Homemade garlic stored in oil must remain refrigerated; never leave it at room temperature.
