Blue Hour, Roasted Deep
Joe’s Blue Hour Bistro
Published
Escargots, mushrooms and red pepper fill caramelized eggplant boats in a striking supper at Joe’s Blue Hour Bistro.
At Joe’s Blue Hour Bistro, escargots left their traditional shells behind for a more substantial vessel: deeply roasted eggplant. The finished boats made a handsome centerpiece, their dark, caramelized edges framing a generous filling of escargots, chopped mushrooms, red pepper and tender eggplant.
The dish was built in layers. Eggplant halves were roasted until easily pierced, then hollowed carefully enough to preserve sturdy shells. Mushrooms and bell pepper were cooked before garlic, chopped eggplant and escargots joined the pan with butter and lemon juice. Once glossy and hot, the mixture was spooned back into the boats for a final turn in the oven.
On the plate, the warm, earthy main met a cool salad of mixed greens, cucumber and crumbled white cheese, lightly dressed with oil and vinegar. That contrast gave the supper its balance: rich filling against fresh leaves, soft roasted eggplant beside crisp cucumber. A final lemon wedge offered another bright counterpoint. It was an assured Blue Hour presentation—generous, colorful and neatly composed around an uncommon main course.
