Italian Sausage Gets Dressed Up for Dinner
Mary’s Blue Hour Bistro
Published

Italian sausage, roasted eggplant peperonata, a roasted-garlic feta cloud, and lemony green beans make an elegant, unfussy late-night plate.
At Mary’s Blue Hour Bistro, Italian sausage took a decidedly elegant turn. The links were browned, simmered in a glossy tomato sauce, and sliced over a deep tangle of roasted eggplant, zucchini, green pepper, and onion. Roasted garlic gave both the sauce and the feta cloud a mellow richness, while a squeeze of lemon kept the green beans bright and lively.
The finished plate made the case for sausage as dinner-party material: a generous sweep of white feta beneath the vegetables, tomato-red sauce catching the light, and crisp green beans piled alongside. Purple olives and a blue-and-white floral plate added an especially handsome finish.
It was the sort of dinner that feels generous without being heavy—exactly right for a beautiful late-night meal. As the bistro puts it, sausage dinners may sound unprepossessing, but they can be memorable and delicious.

# Blue Hour Sausage with Roasted Eggplant Peperonata, Feta Cloud & Lemony Green Beans
**For 2 diners · 55 minutes · 450°F oven; sausages simmered to 160°F**
## Ingredients
– 3/4–1 lb Italian sausage links
– 1 small eggplant, cut into 1-inch chunks
– 1 zucchini, cut into thick half-moons
– 1 green bell pepper, cut into 1-inch pieces
– 1 small onion, sliced
– 1 garlic bulb, plus 3 garlic cloves, sliced or minced
– 1 cup canned tomatoes, crushed by hand
– 8–10 oz green beans, trimmed
– 1 lemon
– 1/2 cup feta, crumbled
– 3 tbsp olive oil, divided
– 1 tsp dried oregano
– Pinch red-pepper flakes
– Salt and black pepper
## Equipment & Before You Start
– Large sheet pan, foil, large skillet with lid, medium pot, small bowl, and 2 warm plates.
– Heat oven to **450°F**. Line the sheet pan with foil.
– Cut 1/4 inch from the top of the garlic bulb to expose the cloves. Drizzle with olive oil, season with salt, wrap loosely in foil, and place on one corner of the sheet pan.
– Set a **45-minute garlic timer**.
## Steps
1. With **20 minutes remaining** on the garlic timer, toss eggplant, zucchini, pepper, and onion with 2 tbsp olive oil, oregano, salt, and pepper. Spread on the sheet pan beside the garlic. Roast until tender and browned at the edges, stirring once halfway.
2. While the vegetables roast, heat 1 tbsp olive oil in the skillet over medium-high heat. Brown the sausages on all sides, 7–9 minutes total. Transfer to a plate.
3. Reduce heat to medium. Add the 3 garlic cloves and red-pepper flakes; stir for 30 seconds. Add tomatoes, 1/4 cup water, salt, and pepper, scraping up browned bits. Return sausages to the skillet, cover, and simmer gently.
4. Bring a medium pot of well-salted water toward a boil. With **4 minutes remaining** on the garlic timer, add the green beans and cook for 3–4 minutes, until bright green and crisp-tender. Drain and toss with lemon juice, olive oil, salt, and pepper.
5. When the garlic timer reaches **0:00**, the garlic should be soft, golden, and squeezeable and the vegetables should be roasted. Squeeze 2–4 roasted garlic cloves into the tomato sauce and mash them in. Scrape the roasted vegetables into the skillet around the sausages; simmer uncovered for 3–5 minutes, until the sauce clings to the vegetables. Cook sausages until firm and **160°F** at the center.
6. Remove the skillet from the heat and rest the sausages in the sauce for 3 minutes. Meanwhile, mash 3–4 roasted garlic cloves with feta, 1 tbsp lemon juice, 1 tbsp olive oil, black pepper, and 1–2 tbsp hot green-bean water until creamy and swoopy.
7. Slice the sausages on the diagonal and return the slices to the sauce.
## Watch For
– The roasted garlic should squeeze easily from its skins.
– Keep the tomato sauce glossy and clinging rather than thin and pooled.
– Taste before adding salt to the feta cloud; feta is already salty.
## Hold & Serve
Keep the feta cloud and green beans separate while the sausages rest. Plate immediately after slicing the sausage so the feta remains visible and the beans stay bright.
## Plate & Present
Make a broad crescent of roasted-garlic feta on each warm plate. Spoon roasted vegetables and a little tomato sauce partly over the feta, then arrange sliced sausage in the center. Place lemony green beans alongside and drizzle a little tomato pan juice around the plate.
