A Spicy Friday Salmon at Mary’s Blue Hour Bistro
Mary’s Blue Hour Bistro
Published

Dijon, smoked paprika and herbs gave roasted salmon a lively Mediterranean edge, with warm kale salad and cool cucumber ribbons completing the plate.
Friday dinner at Mary’s Blue Hour Bistro began with an excellent bargain: two pounds of salmon ready to become something impressive. The goal was a restaurant-style plate that could be prepared ahead, leaving only the fish to roast when company arrived.
After some back and forth, Mary and Big Daddy settled on bright Mediterranean flavors. Four salmon portions were coated with Dijon, lemon juice, oregano, smoked paprika, garlic and red-pepper flakes, then roasted and finished with fresh herbs. Mary found the result “spectacular,” with a bold flavor that reminded her of Cajun seasoning.
Alongside the fish, roasted eggplant and zucchini were folded into massaged kale. The hot vegetables softened the sturdy leaves while retaining the salad’s substance, and dressed cucumber ribbons contributed a cool, crisp contrast. Together, the three components made the composed individual plates Mary had envisioned.
The food was enjoyed too quickly for photographs, but an after-dinner image captured the Bistro itself: a floral-covered table glowing with candles, warm string lights tracing the railing and glasses still gathered around the centerpiece. It is a fitting final frame for a Friday salmon dinner that successfully moved from practical make-ahead planning to full Blue Hour atmosphere.

# Dijon–Herb Mediterranean Salmon
**Timing & heat:** Serves 4; prepare ahead, then roast at **425°F for 10–14 minutes** and rest **2 minutes**.
## Ingredients
– 2 pounds salmon, cut into 4 portions
– 2 tablespoons olive oil
– 1 tablespoon Dijon mustard
– 1 tablespoon lemon juice, plus a little more for optional finishing
– 1 teaspoon dried oregano
– 1 teaspoon smoked paprika
– ½ teaspoon garlic powder
– 1 teaspoon kosher salt
– ½ teaspoon black pepper
– Pinch of red-pepper flakes
– 2 tablespoons finely chopped basil, mint, parsley, Bishop’s weed, or a combination
## Steps
1. Put the salmon on an oiled or parchment-lined baking sheet.
2. Mix the olive oil, Dijon, 1 tablespoon lemon juice, oregano, smoked paprika, garlic powder, salt, pepper, and red-pepper flakes. Spread over the tops and sides of the salmon.
3. Loosely cover and refrigerate the prepared salmon. Refrigerate the chopped herbs separately.
4. When ready to cook, remove the salmon from the refrigerator and heat the oven to **425°F**.
5. Roast for **10–14 minutes**, depending on thickness. Rest for **2 minutes**.
6. Scatter the fresh herbs over the salmon. Add a little lemon juice if desired.
## Watch For
– The edges should separate easily into moist flakes while the center remains slightly deeper pink.
– Keep the seasoned raw salmon refrigerated until the oven preheats.
## Plate & Present
Arrange warm eggplant–zucchini kale salad slightly off-center on each plate. Lean one salmon portion against it, leaving the paprika-Dijon surface visible. Place dressed cucumber ribbons beside the fish with some separation from the warm vegetables. Spoon salmon pan juices over the fish only, wipe the rims, and serve all four plates together.
