After roasting

A bubbling one-casserole Italian sausage bake with tender vegetables, tomato, and a bronzed cheese finish.

For this special Big Daddy’s Bistro meal, Italian sausage, eggplant, zucchini, onion, and garlic went straight into a tomato-seasoned casserole—no skillet parade required. Covered baking softened the vegetables and let the sausage mingle with the glossy tomato juices; a final layer of shredded and block cheese brought the whole dish to a bubbling, lightly bronzed finish.

The photograph captures exactly what made it so appealing: generous sausage pieces tucked among chunky eggplant and zucchini, bright tomato scattered through the pan, and melted cheese pooling over the top. It was a low-stress preparation with high impact, delivering the kind of elegant, deeply satisfying plate that feels far more elaborate than its one-dish method.

A simple salad accompanied both portions, while one plate also received spaghetti. The verdict was unequivocal: delicious, easy to bring together, and a meal worth repeating.

# Salsiccia al Forno with Eggplant, Zucchini & Tomato Cheese Sauce
**About 55 minutes · 400°F · One 8-inch square casserole · 2 portions**

## Equipment & Before You Start
– 8-inch square casserole and foil
– Heat oven to **400°F**. Lightly oil the casserole.

## Ingredients
– 8–10 oz Italian sausage, cut into 1-inch pieces
– 1 small eggplant, cut into ¾-inch cubes
– 1 medium zucchini, cut into thick half-moons
– ½ small onion, thinly sliced
– 2 garlic cloves, thinly sliced or minced
– ¾ cup canned crushed tomatoes
– 1½ tbsp olive oil
– ½ tsp dried oregano
– Pinch red-pepper flakes
– ¼ tsp salt, plus black pepper
– 1 tsp red-wine vinegar or lemon juice
– ¾ cup shredded cheese
– ¼ cup block cheese, cut into small cubes or thin shavings

## Steps
1. In the casserole, combine the tomatoes, **1 tbsp olive oil**, garlic, oregano, red-pepper flakes, salt, pepper, and vinegar or lemon juice.
2. Add the eggplant, zucchini, and onion; toss until coated. Nestle the sausage pieces throughout the vegetables. Drizzle with the remaining **½ tbsp olive oil**.
3. Cover snugly with foil. Set a **35-minute countdown timer** and bake.
4. When the timer reaches **0:00**, remove the foil. Scatter the shredded cheese over the casserole, then add the block-cheese cubes or shavings.
5. Return the casserole to the oven, uncovered, for **10–12 minutes**, until bubbling around the edges, browned on top, and the sausage reaches **165°F** at the center of a piece.

## Watch For
– The eggplant should be tender and the casserole juicy before the cheese goes on.
– Sausage must have no pink center and reach **165°F**.
– The cheese should be melted and bronzed, not scorched.

## Hold & Serve
Rest the casserole for **8–10 minutes** so the tomato juices settle into a glossy sauce.

## Plate & Present
Spoon half onto each warm dinner plate, arranging sausage pieces over the vegetables. Spoon a little tomato sauce around the edge, finish with black pepper, and wipe the rims before serving.
