Tender roasted eggplant, richly filled with lamb and mushrooms, finished under bubbling Italian cheese.

A pair of adorable small baby eggplants became a generously satisfying late-night dinner at Big Daddy’s Bistro. Roasted until tender, the halves were filled with a thick, savory mixture of ground lamb, mushrooms, onion, garlic, tomatoes, oregano, and cumin. A layer of Italian cheese melted into a lightly browned top, while the eggplant shells kept every forkful neatly contained.

The preparation had a pleasing progression: softened eggplant waiting in the baking dish, a skillet full of lamb, mushrooms, and tomato simmering down to a spoonable filling, then the finished half plated beside a crisp salad. One stuffed eggplant half with that fresh salad made for a delicious supper—and the remaining two halves were just as welcome for lunch the next day.

It was a hit: straightforward comfort food with enough color, texture, and molten cheese to make a simple dinner feel special.

# Lamb-Stuffed Baby Eggplants with Mushrooms & Italian Cheese

**Serves 2 • Oven 425°F • Roast 20–25 min, bake 8–10 min, rest 5 min**

## Equipment & Before You Start
– Small baking dish and large skillet
– Heat oven to **425°F**.
– Halve 2 small eggplants lengthwise. Score the flesh in a crosshatch without piercing the skins.
– Finely chop mushrooms and onion; mince garlic. Keep raw lamb separate from ready-to-eat ingredients; wash hands and surfaces after handling it.

## Ingredients
– 2 small eggplants, halved lengthwise
– Olive oil
– Salt and black pepper
– 1 lb ground lamb
– 6–8 oz mushrooms, finely chopped
– ½ small onion, finely chopped
– 2 garlic cloves, minced
– 1 tsp dried oregano
– ½ tsp ground cumin
– Pinch cinnamon or allspice (optional)
– Pinch red-pepper flakes (optional)
– ¾ cup canned crushed tomatoes or tomato sauce
– 1 tbsp tomato paste (optional)
– ¾ cup shredded Italian cheese, divided
– Lemon wedge (optional)
– Chopped parsley or mint (optional)

## Steps
1. Brush eggplant cut sides with olive oil; season with salt and pepper. Arrange cut-side up in the baking dish. Roast for **20–25 minutes**, until soft and lightly browned.

2. **While the eggplants roast,** heat 1 tsp olive oil in a skillet over medium-high heat. Add lamb and cook **5–6 minutes**, breaking it up, until browned and no pink remains. Spoon off excess fat if there is a great deal.

3. Add mushrooms and onion. Cook **6–8 minutes**, until the mushrooms release their moisture and the skillet is no longer watery.

4. Add garlic, oregano, cumin, optional cinnamon or allspice, optional pepper flakes, and black pepper. Cook **30 seconds**.

5. Stir in tomatoes and optional tomato paste. Simmer **5–7 minutes**, until thick and spoonable. Taste, then salt as needed.

6. When the eggplants are tender, gently press and loosen their flesh with a spoon to make shallow hollows, leaving sturdy borders. Fold **¼ cup cheese** into the lamb filling. Mound filling into the 4 eggplant halves.

7. Top with the remaining **½ cup cheese**. Bake at **425°F for 8–10 minutes**, until bubbling and golden at the edges. Let stand **5 minutes**.

## Watch For
– Eggplant should be soft enough to press easily but still hold its shape.
– Lamb must be fully cooked with no pink remaining.
– Filling should be thick, not soupy, before stuffing.
– Cheese should bubble and brown lightly at the edges.

## Plate & Present
Place **2 stuffed eggplant halves per plate**. Spoon any tomato-lamb juices alongside. Finish with lemon and parsley or mint, if using.

## Hold & Serve
Serve after the 5-minute rest for the best texture and molten cheese. Keep the finished eggplants in the warm baking dish until plating.
