A gently reheated roulade dinner with buttered corn, green beans, and a glossy skillet of browned vegetables.

Leftover pork loin roulade took center stage at Big Daddy’s Bistro in a dinner built for a careful second act. Four slices warmed gently in a cast-iron skillet, their savory filling intact and small pats of butter melting over the top.

The skillet also held a colorful mix of browned zucchini, yellow squash, peppers, and greens, giving the plate a richly roasted counterpoint to the tender pork. A reconstituted blue-cheese yogurt sauce, loosened with cream and water until smooth, brought a cool, tangy accent to the roulade without overwhelming it.

On the side, green beans were cooked until bright and just tender, then finished with butter or olive oil, garlic, lemon, and black pepper. Buttered corn rounded out the meal simply. A brief turn in a 350-degree oven warmed the pork and vegetables through, keeping the dinner easygoing while giving every element its moment.

# Pork Loin Roulade with Blue-Cheese Yogurt Sauce, Green Beans, and Buttered Corn

**Serves 2 · 8-minute final countdown · Gentle medium-low skillet heat; low heat for sauce**

## Equipment & Before You Start
– Large pot for green beans
– Skillet for pork roulade
– Small saucepan or pan for sauce
– Bring generously salted water to a boil. Trim the green beans. Have two warm plates ready.

## Ingredients
– 4 slices leftover pork loin roulade
– Green beans, trimmed
– 1 tablespoon butter or olive oil, plus a small knob of butter or drizzle of olive oil for the pork
– 1 small garlic clove, finely chopped or grated
– Lemon
– Black pepper
– Prepared blue-cheese yogurt sauce, reconstituted with cream and water until smooth
– Cooked corn
– Butter and salt, for the corn

## Steps
1. Once the water boils, set an **8-minute timer**. Add the green beans and cook until bright green and just tender, about 4–6 minutes.
2. At the same time, arrange the roulade in a single layer in a skillet with the small knob of butter or drizzle of oil. Warm over medium-low heat, turning once, until heated through without drying out.
3. **With 4 minutes remaining**, heat the corn with butter, salt, and black pepper.
4. **With 2 minutes remaining**, drain the beans well. Return them to the hot pot or a skillet with 1 tablespoon butter or olive oil, garlic, a squeeze of lemon, and black pepper. Toss for 1–2 minutes.
5. Warm the blue-cheese yogurt sauce gently over low heat, stirring until loose and saucy. Add a small splash of cream or water if needed. Finish with black pepper and the tiniest squeeze of lemon; taste before adding salt.
6. When the timer reaches **0:00**, divide the pork, green beans, and buttered corn between two plates.

## Watch For
– Keep the pork at gentle heat so the filling stays intact and the meat remains moist.
– Do not boil the blue-cheese yogurt sauce; warm it only until smooth and spoonable.
– Drain the beans thoroughly so their dressing stays glossy.

## Hold & Serve
Serve immediately when the timer reaches 0:00, while the roulade is hot, the beans are bright and glossy, and the sauce is loose.

## Plate & Present
Fan 2 roulade slices on each plate. Spoon a modest ribbon of blue-cheese yogurt sauce alongside and lightly over the pork. Mound the lemony green beans beside it and add the buttered corn. Finish with black pepper and wipe the plate rims before serving.
