A Sheet-Pan Sausage Roast for a Generous Dinner
Mary’s Blue Hour Bistro
Published

Italian sausages, zucchini, peppers, red onion and blistered mozzarella turn a crowded baking dish idea into a richly browned dinner at Mary’s Blue Hour Bistro.
This dinner was a hit!! I had originally planned on cooking this Italian sausage roast in a handsome baking dish. Then, after consulting with Big Daddy, I moved everything to a sheet pan. All those chunks of zucchini and peppers needed space so they would brown, not steam. The change made room for everything to brown: thick-cut zucchini, green pepper, red onion and bright yellow pepper pieces spread around five sausages.
The finished pan delivered exactly the pleasures the dish promised—charred roasted vegetables, deeply browned sausages and generous, gooey pockets of mozzarella. A little tomato sauce kept warm alongside the roast brought a saucy note to the plate without sacrificing those caramelized edges. I loved that tomato sauce! It was the perfect touch.
It was a generous dinner by design, with two servings on the table and extra cooked sausages set aside for another meal. From the first full baking dish to the final cheese-topped roast, this was a practical pivot with especially delicious results.

# Italian Sausage, Zucchini & Pepper Sheet-Pan Roast with Mozzarella
**For 2 dinner plates, with 3 cooked sausages for later · 425°F roast: 20 minutes, then 12–15 minutes; broil 1–2 minutes**
## Equipment & Before You Start
– Largest rimmed sheet pan
– Small saucepan
– Heat oven to **425°F**. Spread the vegetables in a mostly single layer, leaving space between the sausages so everything can brown.
## Ingredients
– 5 Italian sausages, sweet, hot, or mixed
– 2 medium zucchini, cut into thick half-moons
– 1 green pepper, cut into broad strips
– 1 large red onion, cut into wedges
– 4 mozzarella cheese sticks, cut into ½-inch coins
– 2 tablespoons olive oil
– 3 garlic cloves, sliced or chopped
– 1 teaspoon dried oregano
– ½ teaspoon fennel seed, lightly crushed
– ¼–½ teaspoon red-pepper flakes
– Modest pinch salt and black pepper
– 1 cup canned tomatoes, crushed or roughly chopped
– ½ cup dry red wine or water
– 2 teaspoons red-wine vinegar or lemon juice
– Parmesan, basil, parsley, or Bishop’s weed, for finishing
## Steps
1. Toss zucchini, green pepper, and red onion with olive oil, oregano, fennel seed, red-pepper flakes, salt, and black pepper on the sheet pan. Arrange in a mostly single layer. Lay the sausages across the pan with space between them; nudge vegetables aside so the sausages are not buried.
2. Roast for **20 minutes**.
3. Meanwhile, combine tomatoes, wine or water, garlic, and vinegar or lemon juice. Put the small saucepan over low heat to warm the remaining sauce later.
4. When the 20-minute timer rings, turn the sausages and stir the vegetables, scraping up browned bits. Drizzle **about ½ cup** of the tomato mixture mostly around the vegetables.
5. Roast for **12–15 minutes**, until the vegetables are tender with browned edges, the sausages are fully cooked through with no pink at the center, and the pan juices are bubbling.
6. Scatter mozzarella over the pan and broil for **1–2 minutes**, until melted and blistered. Watch closely.
## Hold & Serve
Keep the remaining tomato mixture warm in the saucepan while the sheet pan roasts. Slice 2 sausages for the two dinner plates; refrigerate the remaining cooked sausages for another meal.
## Watch For
– Do not add the full tomato mixture to the sheet pan; excess liquid will make the vegetables watery rather than roasted.
– Keep a close eye on the mozzarella under the broiler so it blisters without scorching.
## Plate & Present
Spoon warm tomato sauce onto each of 2 plates. Arrange roasted vegetables and one sliced sausage over each pool of sauce. Finish with Parmesan and basil, parsley, or Bishop’s weed, if using; wipe the plate rims and serve hot.
